  Root Vegetables
   

Vegetables are a fundamental part of the British diet.  At their best, they are vibrant and exciting, yet at their worst they are soggy and boring. It is up to us, as caterers, to ensure that the wealth of Nutrients, Textures and Colours are presented to our customers in the best possible way.

Most root vegetables are available throughout most of the year, with imports from all over the world.  Home grown produce usually TASTES better than imported - but this is usually because they are fresher.  Imported goods will still taste better than any old, poorly stored home-grown produce

Root vegetables must be:

 

                  clean 

                  firm

                  sound

                  unblemished

                  even size

                  even shape

 

When storing root vegetables, remember to open the bag they come in - to make sure they are of the quality required and to stop them from sweating. It is a good idea to remove the vegetables from their packing as soon as possible after delivery - and to place them in appropriate containers.  If this is not possible - then at least loosen the packaging and inspect the contents for damage and content.  Because they are grown in the soil - it not unheard of for a quantity of stones to be included.  And, your customers don't want these
